February Cookies and More at Gideon’s Bakehouse
Gideon’s Bakehouse in Disney Springs has a new menu for February 2025 featuring a returning cookie, two cake slices, and cold brew. This month, Eternal Flame returns with the Eternal Flame cookie, cake slice, and Fire & Iced Coffee. The Strawberry Cream Cake is also on the menu in February for Valentine’s Day along with the returning White Chocolate Caramel Macadamia Nut cookie.
2025 marks the 5th anniversary of Gideon’s Bakehouse at Disney Springs and Gideon’s is celebrating the milestone with the Year of the Gargoyle, telling the story of Águbadijádzs throughout the year and having monthly festivities. In February, the merchandise for the month features the Gargoyle with a an embroidered sweatshirt, t-shirt, air freshener, pin, eye glass cleaner, and sticker. The art print and menu art this month feature a new character, Ourania, the former love of Águbadijádzs. The Eternal Flame candle also returns for Valentine’s Day along with a new Vanilla Crumb Cake air freshener.

February Cookies & Cold Brew
Eternal Flame Cookie — Chocolate cookie laced with Eternal Flame spice- a house-made spice mix of ancho, cayenne, and cinnamon - and the essence of cherry and topped with chocolate-covered cherries (Gideon’s Heat Level - Medium) (Available daily in February at the Disney Springs and East End Market location; limit of 2 per person, subject to availability)
White Chocolate Caramel Macadamia Nut Cookie — Almost 1/2 pound cookie with homemade salted caramel baked in, filled and topped with white chocolate and macadamia nut crumble (Available daily in February at the Disney Springs and East End Market location; limit of 2 per person, subject to availability)
Fire & Iced Coffee Cold Brew — Gideon’s Mocha Nitro Cold Brew with a warm spicy finish (Gideon’s Heat Level - Hot) (Daily in February at the Disney Springs location, subject to availability)

February Cake Slices
This month features two returning cakes - the Eternal Flame Cake and the Strawberry Cream Cake! The Eternal Flame Cake is available on Thursdays and Sundays and the Strawberry Cream Cake is available on Wednesdays and Saturdays at both locations! The cakes are also available as a whole cake preorder for the East End Market location only.
Eternal Flame Cake — Three layer double frosted chocolate cake with red cherry buttercream, chocolate fudge buttercream mixed with Eternal Flame spice, and decorated with cherry roses and red ganache (Gideon’s Heat Level- Low) (Limit of 2 slices per person, while supplies last)
Strawberry Cream Cake — Three layers of strawberry cake with strawberry buttercream and chocolate ganache decorated with a chocolate covered cherry (Made with real food, not artificial flavors) (Limit of 2 slices per person, while supplies last)
